I received a pressure cooker from my Mom for Christmas, thanks Mom! I love it, it saves me time as a busy working Mom. I can now cook a meal, including pot roast in an hour. How awesome is that?
This recipe was for my family of 4.
Ingredients: 2 Pounds of beef chuck roast
2 beef bouillon cubes
1 bay leaf
6 Large Carrots peeled
5 Large Potatoes.
2 Small diced Onions
1/2 stalk of celery
3/4 cup of water
1 Tablespoon of vegetable oil
Salt and Pepper
Sear the pot roast in a frying pan. Season it to taste with salt, pepper, onion powder, and garlic powder. Cook until brown. Saute onions for about 3 minuets.
Add 1 table spoon of vegetable oil in pressure cooker and let oil get warm, and 3/4 cups of water. Add pot roast, and diced onions and 2 beef bouillon cubes. Add 1/2 stalk of celery, carrots, and potatoes. Add bay leaf.
Cook for 65 minuets on high pressure.
If you don’t want the carrots and potatoes to be mushy roast potatoes and carrots, but I was busy and was looking for a quick and easy dinner. Works great both ways.
Preheat oven to 400 degrees.
On a baking sheet, add non stick spray, and place carrots and potatoes. Season with salt, onion powder, and garlic powder. Place on lower rack of your oven. Bake for about 25-30 minutes.
